Armani/Hashi Puts Hamachi Centre Stage

Far Eastern culinary artistry and one of Japan’s most revered ingredients come together this season at Armani/Hashi with a four-course menu that showcases the Japanese yellowtail fish. Native to the north western Pacific Ocean, yellowtail is featured on high-end restaurant menus, in urban sushi bars and on the table in coastal communities across the country, and is considered a seasonal winter favourite in some regions. Yellowtail, which can be caught wild, but which has also spawned a large farmed fish industry, is known as hamachi in Japan. It has a distinctive flavour with a rich, buttery texture that lends itself well to a number of different preparations, and we will demonstrate the delicious versatility of yellowtail this January and February with our special four-course menu prepared by Chef Jin Chul, speciality head chef, Armani/Hashi. The menu opens with a delicate yellowtail ceviche, accented with mitsuba, the Japanese version of parsley, ponzu, sesame oil and decorated with edible flowers. A crisp serving of traditional tempura follows, with a garnish of shiso leaves, the Japanese ginger known as myoga, and accompanied by a rich yet zesty umeboshi aïoli. The simple beauty of a fresh yellowtail fillet is transformed for our main course, which is prepared teppanyaki style with hajikami, which are pickled ginger shoots, and dressed with a yuzu miso. The simple yet intricately flavoured menu concludes with a lemongrass Eton Mess featuring mango chunks, lime meringue and served with a passion fruit sorbet. Just a shaving or two of black truffle can transform any dish, and my three-course menu makes for a show-stopping dinner party that anyone can handle,” said Chef Alessandro, the restaurant’s speciality head chef. Armani/Ristorante sources its black winter truffles from Norcia, in the culinary heartland of Umbria, which suffered extensive damage in the recent earthquake, which destroyed its famous Basilica St Benedict. “With this menu we will pay homage to Umbria, its people and the black truffle. We also import two exceptional 2 EVOO olive oils from the area, which I have been using in my recipes since 2001; so this will be a true culinary celebration of one of my homeland’s most beautiful regions,” remarked Chef Alessandro. Produced by acclaimed and award-winning olive oil expert Marco Viola, the Inprivio and Collerruita labels have a unique aroma and intense flavour that reflect both the local terrain and agricultural heritage of Umbria.
